日本威士忌近年揚威國際,1923年設立的三得利山崎威士忌蒸餾廠(サントリー山崎蒸溜所)是日本最早的威士忌工廠,可以來這裡探訪日本威士忌的歷史,也有很划算的付費試喝參觀行程可以參加。
三得利山崎威士忌蒸餾廠位在大阪和京都交界處,最近的車站是JR山崎駅,車站內的看板就有指示要怎麼樣走到蒸餾所。

從車站步行到酒廠大約要10分鐘路程,這裡感覺起來還是蠻郊區的,山崎是桂川、宇治川、木津川等3條河流匯集的地方,倚山傍水,有著好水質,潮濕的環境也適合儲存威士忌讓酒液熟成,讓這裡近百年來成為日本的威士忌重鎮。

要參觀工廠需要事先報名,以前參觀工廠和試喝行程是免費的,但隨著威士忌變得熱門,要進廠雖然還是免費,但要深入看威士忌製程和試喝得付¥1000。

這回有先上官網報名,結果抵達的時間比預約時間晚了10分鐘左右,報到時深表歉意,倒是工作人員很緊張,趕緊用無線電聯繫,把我直接拎到這個時段參觀團體的位置去。

三得利創辦人鳥井信治郎在1923年建立了山崎蒸餾廠,一開始邀來了日本威士忌史另一位名人竹鶴政孝擔任廠長,但後來兩人理念不合拆夥,竹鶴政孝就到北海道去創立余市蒸餾所,山崎則繼續打造適合日本人口味的威士忌。進入工廠之後,就可以聞到沿途都是濃濃的麥香味。

接著進到蒸餾室,山崎蒸餾廠有多種不同的蒸餾機,這和蘇格蘭蒸餾廠多數只有一款蒸餾機不同。

在這裡可以聞聞看剛蒸餾出來的原酒,酒精濃度很高,應該無法直接喝啦。

再來就進到貯藏室,裡面就是滿滿的木桶和威士忌香味了。山崎蒸餾廠除了有不同方式的蒸餾,也使用各種不同的木桶來熟成威士忌,感覺就是用實驗的方式來找出最好的口感。

威士忌在這裡都要存放好幾年以上,導覽員說,剛建廠時當地居民不知道威士忌是怎麼生產,還以為工廠裡面有會吃麥子的怪獸,因為每天麥子運進來都不見有產品運出。

接著走出廠房,會看到有泉水流過的地方,感覺就是這種沁涼的好水才能蒸餾出好酒。

工廠後方還有個小神社椎尾神社,但因為是跟著導覽員參訪工廠,不好意思脫隊去參拜。

接著眾人回到屋內,進行最重要的試喝行程啦。現場有提供山崎、白州等威士忌試喝,也可以喝喝看這裡的原水很清甜。

試喝結束後就回到一開始錯過的威士忌博物館去參觀,沿途有剛開廠時使用的第一座蒸餾釜,以及三得利創辦人鳥井信治郎和第二任社長佐治敬三的銅像。

整座空間設計成威士忌圖書館的概念,架上有著各種不同年份、不同方式蒸餾和不同桶子熟成的威士忌,參觀其中可以聞到淡淡酒香,真是很宜人的工廠見學行程啊。
